Cantaloupe Sorbet

This is my favorite way of getting my tiny humans to eat fruit.  This is also a great way of getting rid of a whole cantaloupe before it goes bad (at least that always my issue).

Ingredients:

1 C Water

1 C Sugar

4 C Cubed Cantaloupe

Juice from 1 Lemon

Directions:

-In pot over medium heat, combine sugar and water.  Cook until sugar melts.  Remove from heat and cool completely before using.

-Place diced cantaloupe in freezer for 15 minutes.  Remove from freezer and place in food processor, blend until no more solids remain.

-Using an ice cream maker, combine all ingredients and process based on manufactures recommendations.  Kitchen aid for stand mixer take 7-12 minutes.

-Remove from maker, place in airtight container and freeze 2 hours before serving.  Also you may want to allow this to sit for 5 minutes prior to serving, it makes it easier to serve.  Enjoy!
