Pulled Pork Calzone

Okay, I have never been able to not have tons of leftover pulled pork.  Hence all the recent posts about it.  This is a great way to use up any leftovers.


2 Thin Crust Pizza Dough (such as Pillsbury)

1 T Olive Oil

2 C Diced Cabbage

1 Large Carrot, grated

1 Large Shallot, diced

1 tsp. Italian Seasoning

1 1/2 C Pulled Pork

1 1/2 C Shredded Colby Jack Cheese


3/4 C BBQ Sauce

6 oz. Can Tomato Paste

3 T Italian Dressing


-In small pot over medium heat combine all sauce ingredients.  Heat, stirring often until all ingredients mix together.  Set aside.

-In large skillet over medium high heat, heat olive oil.  Add in cabbage, shallot and carrot.  Cook until shallot cooks and cabbage softens.

-Add in pulled pork and sauce.  Mix well. Remove from heat and allow to cool before next step.

-Roll out each dough.  Place half of meat mixture on half of dough, top each with half of cheese.  Fold over dough and seal edges (I use a fork), cut at least 2 small holes in top of dough.

-Bake 425 degrees for 14-18 minutes, times may vary based on oven or until dough is crisp and golden brown.  Remove from oven and allow to cool before cutting and serving.  Enjoy!
