Black Bean and Cabbage Soup

This is so yummy.  My family are all lovers of beans, so I created this recipe.  This is a great way to warm up on a cold day.

Ingredients:

3 Cans Black Beans, drained (about 3 C Fresh, cooked)

1 Red Onion, diced

1 Can Fire Roasted Tomatoes

1 Can Corn (11oz)

1/2 C Finely Chopped Cabbage

1tsp. Garlic Powder

1/2tsp. Dried Sage

1 1/2 tsp. Salt

Pepper to taste

4 C Vegetable Broth

1/2tsp. Turmeric

1/4tsp. Coriander Seed (Optional)

1/4 tsp. Dried Dill

1/2T Cajun Seasoning

1tsp. Dried Cilantro

Directions:

-Puree 1 1/2 cans of black beans.

-Add all ingredients into crockpot, cook low 6 hours.  Enjoy.

Great with tortilla strips, sour cream and fresh cilantro served on top.
