Marinated Tofu

Ingredients:

14oz Package Extra Firm Tofu

Marinade:

1/4 C Mushroom Infused Soy Sauce

1 T Mirin

1T Rice Vinegar

1T Miso Paste (I used white, but any should work)

1 tsp. Garlic Chili Sauce

Directions:

-Open tofu, drain off liquid, wrap in flour sack towel, or kitchen towel, place in container and weigh down. This will pull out the liquid from the tofu and allow it to better absorb the marinade flavor. Place in fridge for a couple hours to over night.

-Mix all marinade ingredients in bowl (large enough for marinade and later tofu (together, set aside.

-Remove tofu from fridge and towel. Cut into bite size pieces, place in marinade, lightly stir to coat, marinate 30 mins to 1 hour, stirring occassionally.

-You can cook tofu anyway you want, I cooked over medium high heat, used olive oil, added in tofu and cooked until slightly crispy. But this can be cooked anyway you desire to cook or how you usually cook your tofu. Enjoy!

Salmon Tacos

I was gifted some salmon fillets, so I figured why not make them into fish tacos.  I marinated these for a few hours, and trust me they were amazing. It has a bit of an Asian inspiration, so I will admit I may of loved this recipe almost too much.

 

Ingredients:

3-5 Salmon Fillets

Marinade:

1/4 C Soy Sauce

1/4 C Pineapple Juice

1 T Olive Oil

1 T Rice Vinegar

1 tsp. Cumin

1 tsp. Minced Garlic

1/2 tsp. Ground Ginger

1 tsp. Sesame Oil

Pepper to taste

Sauce:

1 1/2 T Olive Oil

1 Lime Juiced

1/2 C Sweet Chili Sauce

1 T Soy Sauce

1/2 tsp. Garlic Chili Sauce

1/2 tsp. Granulated Garlic

1/4-1/2 tsp. Fresh Grated Ginger

Pepper to taste

Directions:

-Mix all marinade ingredients together, place fish in sealable bag, pour in marinade.  Marinate at least 2 hours.

-Heat skillet over medium high heat, add in 2 T Olive Oil, cook fish 2-4 minutes on one side, flip and cook another 3-4 minutes (you want salmon to be cooked to medium), time depends on how thick the fillets are (please don’t walk away from this recipe it can go from fine to burnt quick).

-Combine sauce ingredients in pot until all ingredients combine, and drizzle over taco before serving, Enjoy!

Pork and Broccoli Stirfry

This is a super simple and easy recipe to make on a busy night. My family loves any type of stir fry so I decided to take the idea of beef and broccoli and use pork instead.  This recipe is Gluten Free is anyone needs that, and can be served over rice or noodles.

 

Ingredients:

1 lb. Pork loin, sliced into thin strips

2 md. Heads of Broccoli, florets removed

2 T Olive Oil

Salt and Pepper to taste

Sauce:

3T Soy Sauce (use GF if needed)

3 T Ketchup

2 T Brown Sugar

1 T Garlic Chili Sauce

1 1/2 tsp. Rice Wine Vinegar

1 tsp. Water

1 tsp. Cornstarch

1/2 tsp. Sesame Oil

1/4 tsp. Black Pepper

Directions:

-Mix all sauce ingredients together, set aside.

-In large skillet over medium heat, add in pork, sprinkle with salt and pepper. Cook 5 minutes.  Add in broccoli, cook 3 minutes, pour in sauce bring to boil, reduce to simmer cover and cook 7-8 minutes or until broccoli is tender.  Serve over your favorite pasta or rice. Enjoy!

Chinese BBQ Sauce

This is my favorite sauce in a long time.  Many recipes for this sauce call for ketchup, but I figured that there was enough sugar in the recipe that I opted to use another ingredient instead, and trust me this stuff is better than amazing.

Ingredients:

12 oz. Jar Chili Sauce

1/4 C Hoisin Sauce

1/4 C Sugar

1/8 C Dark Corn Syrup

1 T Rice Vinegar

1/2 tsp. Chinese 5 Spice

1/2-1 tsp. Garlic Chili Paste (amount depends on desired heat)

1/2 tsp. Garlic Powder

1/4 tsp. Baking Soda

Directions:

-Combine all ingredients in medium pot over medium heat.  Using whisk to ensure that sugar melts while cooking, bring to low boil.

-Reduce to simmer and cook 10 minutes.

-Place in airtight container in fridge until ready to use. Enjoy!

Vegan Stir Fry Sauce

This is an easy recipe that is sure to turn your next stir fry into a new love.

 

Ingredients:

2 T Olive Oil

1 T Minced Garlic

1 T Minced Fresh Ginger

3 T Brown Sugar

1/2 C Vegetable Broth

1/4 C Rice Wine Vinegar

1/4 C Soy Sauce (use gf if needed)

1 T Sesame Oil

1-3 tsp. Garlic Chili Sauce (amount depends on heat desired)

1/4 C Water

2 T Cornstarch

Directions:

-Combine water and cornstarch, set aside.

-In small pot over medium heat, heat oil.  Add in ginger and garlic.  Cook 2 minutes.  Add in remaining ingredients, stirring well.

-Bring to low boil and stir in water/cornstarch mixture.  Bring to boil and cook until thick.  Use with your favorite stir-fry.  Enjoy!

Garlic Lime Stir-fry Sauce

This is an amazing sauce that is sure to make your next stir-fry taste amazing.  I used with pork, so I’m sure it would be amazing with any meat.  Simple mix together and use as you would any other stir-fry sauce.

Ingredients:

1/4 C Soy Sauce

Juice and Zest of 1 Lime

2 T Grenadine

1 T Olive Oil

1 T Balsamic Vinegar

1 T Brown Sugar

1 T Cornstarch

1/2 T Thai Chili Sauce

1/2 T Rice Vinegar

2 tsp. Minced Garlic

Directions:

-Whisk all ingredients together in bowl.  Ensure cornstarch is dissolved.  Use as you would any other stir fry sauce

Asian Braised Pork Belly

This is a great way to cook pork belly (low and slow).  Its packed with flavor and is sure to be a great main course to any meal.

Ingredients:

2 lb. Pork Belly

3-5 Slices Fresh Ginger (you want these thin)

1/2 C Rice Wine Vinegar

3 1/2 T Soy Sauce (use GF if needed)

1 T Hoisin Sauce

1 T Thai Chili Sauce

1 T Honey

1 T Sugar

2 tsp. Chinese Five Spice

Sliced Scallions for serving

Directions:

-Bring pot of water to boil.  Add in pork belly and boil 5 minutes, drain and rinse under cold water.

-Dice pork belly into bite size pieces.  Add to pot with remaining ingredient (except scallions).  Add just enough water to barely cover meat, bring to boil, reduce to simmer, cover and cook 1 hour.

-Remove lid, increase temperature to high and stir often until liquid evaporates and caramel like sauce is left, stir pork belly to ensure even coating.  Serve over your favorite rice or pasta.  Enjoy!

Homemade Orange Chicken Sauce

Ingredients:

3/4 C Orange Juice

1Tsp. Orange Zest

1tsp. Fresh Grated Ginger

3 Fresh Chili Peppers, seeds removed, finely chopped*

1 T Rice Vinegar

1/2 T Seasame Oil**

2Cloves Garlic, finely chopped

Dash of Salt (I used Garlic Salt)

1T Soy Sauce

1T Brown Sugar

-1/4 C Water

-1/4T Cornstarch

Directions:

In large saucepan over medium heat, bring all ingredients but water and cornstarch to light boil (where mixture starts to boil with tiny bubbles). -Make water, cornstarch slurry (mix in bowl separately until cornstarch is well blended). Add to saucepan, stir over medium heat until sauce thickens.

-Mix Sauce over chicken or other ingredients
