Chili Lime Cod

 

Ingredients:

1.5 lb. Cod Fillet

2-3 T Olive Oil

Rub:

1 tsp. Smoked Paprika

1 tsp. Dried Parsley

1/2 tsp. Dried Oregano

1/2 tsp. Chili Powder

1/2 tsp. Cumin

1/2 tsp. Garlic Salt

1/4 tsp. Black Pepper

Cayenne Pepper to taste

Sauce:

3 T Butter

1 Lime, zest and juice

1 T Chipotle Pepper Sauce

Chipotle Chili Powder to taste

Directions:

-Cut fillet in to smaller portion sized fillets, set aside.

-Place all rub ingredients in food processor, process until well combined.

-Dust one side of all smaller fillets with rub, allow to sit 5 minutes, turn over and do the other side.

-While letting rub set, in small pot over medium low heat, add all ingredients to pot.  Stir occasionally until butter melts, allow sauce to cook 5 minutes. Reduce heat to warm to keep sauce warm while fish cooks.

-Heat olive oil in large skillet over medium high heat. Add fish and cook 2-3 minutes per side. Remove from skillet and serve with sauce drizzled over time. EnjoY!

Chipotle Orange Scallops

This is an amazing appetizer for any meal.  I love the taste of chipotle pepper and love adobo sauce even more; so I figured why not use the on scallops to make them out of this world.

Ingredients:

1/2 lb. Sea Scallops

Chipotle Chili Powder, Garlic Salt and Cumin for dusting scallops

2 T Butter, divided

1 Chipotle Pepper, diced

2tsp. Adobo Sauce

1/4 C Orange Juice

Cooking Spray

Directions:

-Dust both sides of scallops with chili powder, garlic salt and cumin.

-Spray skillet with cooking spray and melt 1 T butter over medium to medium high heat (every stove is different).

-Add scallops to hot pan cook 1-3 minutes per side or until lightly golden and cooked, flip and cook 1-2 minutes or until cooked.  Remove from pan and set aside.

-Add in remaining butter, orange juice and adobo sauce, bring to low boil and cook until sauce thickens and reduces by half.

-Remove pan from heat, add in cooked scallops and toss in sauce. Serve immediately, Enjoy!

Sweet and Savory Steak Rub

This is a great rub to use for your next steak meal.  This rub is so good I promise you wont need or desire a sauce of any kind, though compound butter is a must in my house when serving steak. (Check out other recipe for the one that love the most)

 

Ingredients:

2 tsp. Smoked Paprika

2 tsp. Salt

2 tsp. Sugar

1 1/2 tsp. Garlic Powder

1 tsp. Cumin

1 tsp. Brown Sugar

1 tsp. Onion Powder

1/2 tsp. Chinese 5 Spice

1/2 tsp. Chipotle Chili Powder

Directions:

-Combine all ingredients, ensure well mixed.

-Remove steaks and dust liberally on one side, allow to sit 5-7 minutes, do the same for the other side (I do this as I allow my steaks to come to temperature before cooking, never cook cold beef).  Grill as you wish, Enjoy!

 

Spiced Grilled Scallops

This is an amazing combination of flavors that is sure to please anyone wanting an appetizer, though if you are like me I suggest doubling the recipe….these are hard to walk away from eating all.

 

Ingredients:

1 1/2 lbs. Scallops

1 tsp. Garlic Salt

1/2 tsp. Ground Coriander

1/2 tsp. Chipotle Chili Powder

Pepper to taste

1 T Olive Oil

Directions:

-Mix all dry ingredients together, place scallops on skewers, drizzle with olive oil.

-Dust both sides of scallops with dry mix.

-Place on 350 degree grill, cooking 2-4 minutes per side (time will depend on temp and drill).  Remove and Enjoy!

Sweet and Spicy Roasted Pecans

This is a slight spin on the old fashioned roasted pecans so many of us had growing up.  I added a spice to the classic sweetness, and thus my new favorite way to make these was born.  You might want to double recipe if you family loves them as much as mine does.

 

Ingredients:

1 lb.  Halved Pecans

2 Egg Whites

2T Water

3/4 C Sugar

3 tsp. Cinnamon

1 tsp. Sea Salt

1/4 tsp. Chipotle Chili Powder

Dash Smoked Paprika

Cayenne to taste

Directions:

-In bowl mix all ingredients in bowl except pecans, egg whites and water.  Set aside.

-In large bowl, using hand mixer, mix egg whites and water together.  Mix until light and fluffy (you don’t want peaks, so don’t over beat).

-Fold pecans into egg whites.  Then fold in spice blend.

-Place pecans on parchment lined baking pan.  Bake 225 degrees for 1 hour, rotating nuts every 15 minutes.  Remove from oven and allow to cool, then place in in airtight container.  Enjoy!
