Lemonade Grilled Chicken

This is done the way many would typically do “Beer Can Chicken” though I chose to do something other than beer.  I had leftover lemonade and decided to use it as well.  The rub on this chicken tastes a lot like BBQ Sauce, so needless to say this is an amazing mixture of flavor.

3-6 lb. Whole Chicken

1/2 C Lemonade

1 Sprig of Oregano

2 Sprigs Tarragon

1/2 T Dry Mustard

1/2 T Brown Sugar

2 tsp. Chili Powder

1 tsp. Granulated Garlic

1 tsp. Granulated Onion

1 tsp. Cumin

1 tsp. Oregano

1/2 tsp. Black Pepper

1/2 tsp. Salt

1/2 tsp. Smoked Paprika

-Combine all rub ingredients together, set aside.

-Cut top off old soda/beer can to fully open, pour in lemonade and add fresh herbs, add 2 tsp. rub.  Set inside can chicken holder (these can be found in grilling section of most stores).

-Clean chicken, lightly rinse, dry with paper towels.  Place some rub on inside of chicken cavity, place chicken over can on cooker.  Tie wings and legs close to body to prevent burning.

-Rub remaining rub over outside of chicken.

-Heat grill to hottest setting, place chicken over foil on grill, cook 10 minutes.  Reduce temperature to low and cook an  additonal hour to 2 or until thickest part reaches 165 degrees. (cooking time will vary based on grill and size of bird).  Remove from grill and allow to rest for 10 minutes, remove from can and rest an additional 5 minutes.

-Cut and serve.  Enjoy!
