I had tons of zucchini that needed to be used, but I wanted a great side with dinner. These are super simple to make and taste even better.
4 Medium Zucchini, grated
4 Eggs, beaten
1 1/2 C Italian Style Bread Crumbs
2 C Shredded Colby-Jack Cheese
1 tsp. Granulated Garlic
Salt and Pepper to taste (I used garlic salt)
-Place a mesh strainer over bowl, add in grated zucchini, add salt and allow to sit for 20 minutes. Place zucchini in clean kitchen towel (I use a flower sack towel), and twist to wring out as much water as possible.
-Combine zucchini and all other ingredients together. Form into golf ball sized balls. Place on parchment lined baking sheet.
-Bake 400 degrees for 25-30 minutes or until golden brown. Remove from oven, serve warm with your favorite dipping sauce (I use tomato infused ranch). Enjoy!
