I needed a quick and easy meal for the tiny humans and myself, my kiddos love sandwiches; this literally was the perfect meal(almost all food groups in one place). These are a perfect appetizer for any party, or with a simple side they can make an awesome meal as well.
Ingredients:
4 oz. Cream Cheese, softened
3 T Sour Cream
2 T Mayonnaise
1 C Marinated Artichoke Hearts, diced
2 T Brine From Artichokes (optional)
1 T Italian Dressing Mix
1 C Diced Fresh Spinach
1 3/4 C Shredded Chicken
1 C Italian Blend Shredded Cheese, can use mozzarella
Salt and Pepper to taste
12 Slider Rolls
Toppings:
2 T Butter
2 tsp. Minced Garlic
1/2 tsp. Italian Seasoning
Directions:
-In large bowl mix cream cheese, sour cream, marinade, mayonnaise and salt and pepper to taste using a hand mixer.
-Slowly mix in artichokes, chicken, spinach and 1/4 C cheese.
-Place bottoms of rolls in grease 13X9 inch baking sheet, spread the meat and veggie mix evenly over bottoms. Top with remaining 3/4 C cheese, top with top of buns.
-In small saucepan over medium low heat melt butter add in Italian seasoning and garlic. Allow to cook until garlic become fragrant, about 3 minutes. Brush butter mix over top of buns.
-Cover with foil and bake 350 degrees for 20 minutes. Remove from oven and allow to cool some before serving. Enjoy!
