Grilled Italian Zucchini and Potatoes

 

Ingredients:

4 Zucchini, sliced into half moons, or quartered if larger

  1. 5 lbs. Fingerling Potatoes, cut in half or quartered if larger

1 Medium Shallot, finely diced

3 Cloves Garlic, minced

3 T Olive Oil

1 T Italian Dressing

1 Package Italian Dressing Mix

1/2 C Mozzarella Cheese

Directions:

-Place a colander over a bowl, sprinkle zucchini with salt, allow to sit for 20-30 minutes.  Place zucchini in kitchen towel and ring out excess water.

-Combine all ingredients in large bowl with zucchini, mix well to ensure even coating of all ingredients.

-Place onto large piece of aluminum foil.  Fold over edges to create packet.

-Heat grill to 350 degrees, place packet, seam side down and cook 20-30 minutes or until veggies are soft, flip over half way through cooking time.  Enjoy!
