I needed a cod recipe for one tiny human that is super picky, but he loves lemon and honey, so I figured what a better way to make cod edible to mr. picky?…combine them both.

1/3 C Honey
1 T Minced Garlic
2 T Fresh Parsley
4-6 Slices Thin Fresh Lemon
1 lb. Cod Fillet, cut into smaller pieces (this will allow to cook evenly)
-In small pot over medium heat combine butter, honey and garlic. Cook until all ingredients blend together and sauce reduces slightly. Remove from heat and stir in parsley. Allow to cool before next step.
-Place some of sauce inside aluminium foil, you need a large enough piece to place all fish inside and to cover and seal to make package. Place fish on top of sauce, pour over remaining sauce, can save some for dipping later (I did), top with lemon slices.
-Fold over foil, and roll ends to seal.
-Heat grill to about 400 degrees, place foil package on grill. Cook 8-12 minutes or until fish is flaky. Enjoy!
