Creamy Avocado Dressing Pasta Salad


1 lb. Ziti Pasta

1/2 C Corn Kernels (I used frozen, defrosted)

1/2 C Green Pease(I used frozen, defrosted)

1 Avocado, diced

1 C Grape Tomatoes, quartered


2 Avocados

1/2 C Sour Cream

4 T Milk

1/4 C Cilantro

2 tsp. Adobo Sauce

1 tsp. Lime Zest

Juice from 1 Lime

1/2 tsp. Granulated Garlic

1/2 tsp. Cumin

Salt and Pepper to taste


-Cook pasta per package directions. Drain, place in large bowl.  Add in remaining ingredients, stirring well.

-In food processor, combine all dressing ingredients.  Process until smooth.  Pour over pasta, stir well to coat.

-Cover and place in fridge for at least 1 hour or until chilled.  Enjoy!
