Crockpot London Broil

I needed a recipe to use a London Broil that I had for people that hate their meat with any pink.  This was honestly the only idea that I could come up with that wouldn’t leave the roast dry or chewy; but don’t be fearful this recipe turned out great.

Ingredients:

1.5-3 lb. London Broil Roast

2 C High Quality Beer (the better the beer the better the taste)

12 oz. Can Soda (I used Coke, can substitute beef broth)

2 T Dried Onion Flake

2 T Beef Boullion Powder

2 tsp. Dried Tarragon

1 tsp. Dried Parsley

2 Cloves Garlic, minced

1/2 tsp. Garlic Salt

1/2 tsp. Smoked Paprika

1/4 tsp. Celery Seed

Gravy:

4 T Butter

1/4 C Flour

2 + C Broth

Salt and Pepper

Directions:

-Combine all ingredients (except gravy) in crockpot, cook on low 6-7 hours, flipping every 2 hours.  You don’t have to do this, but it helps with cooking evenly.

-Remove roast from crockpot, it will fall apart, but you can break up more for desired size.

Gravy:

-In small pot over medium heat melt butter, whisk in flour to create roux.  Slowly add in broth from roast, ensure that roux is dissolved.  The amount of broth needed will depend on how thin or thick you want your gravy. Season gravy with extra salt and pepper if you desire.

Serve gravy over roast.  Enjoy!
