1 C Canned Coconut Milk
3 1/2 C Vegetable Broth
3 C Jasmine Rice
2 T Butter
2 Cloves Garlic, minced
Garlic Salt and Pepper
1 1/2 C Frozen Corn, defrosted
15.5 oz Can Black Beans, rinsed and drained
1/3 C Sour Cream
2 T Lime Juice
-Follow recipe for roasting peppers, deseed and dice. Set aside.
-In medium pot bring coconut milk and vegetable broth to boil. Add in butter, garlic salt, pepper rice and garlic. Cover and reduce heat, simmer for 15 minutes.
-Add in remaining ingredients. Enjoy!
