Coconut Lime Grilled Pork Chops

Its almost summer, so I needed a new pork chop recipe that is as fresh as the air is this time of year.  I love my grill, so of course this recipe is for my favorite way to cook.  This recipe is packed with flavor and is sure to brighten your taste buds to the extreme.


2.5 lbs. Pork Loin Chops (these are boneless)

1 C Canned Coconut Milk (be sure to shake can well)

Zest from one Lime

Juice from one Lime

2 T Fresh Cilantro, finely diced

2 T Cumin

1/4 C Light Brown Sugar, packed

2 T Soy Sauce

2 tsp. Salt

1 tsp. Granulated Garlic

1 tsp. Black Pepper

1/2 tsp. Ground Ginger


-Mix all ingredients together, set aside.

-Place pork in sealable bag, pour marinade over meat.  Seal and place in fridge for about 4 hours.

-Heat grill to at least 350, remove chops from marinade and grill until done.  Allow to rest about 5-7 minutes prior to serving.  Enjoy!
