Bacon Cheeseburger Quesadillas


6 Slices Bacon, cooked crisp, crumbled

1 lb. Lean Ground Beef

2 Cloves Garlic, minced

1 Yellow Onion, finely diced

Sesoning Salt

2 Roma Tomatoes, finely diced

Hamburger Sliced Pickles

Fresh Tomatoes, sliced thin

2 C Shredded Swiss Cheese

2 C Shredded Cheddar Cheese

Burritos Sized Flour Tortillas


1/4 C Ketchup

1/4 C Worcestershire Sauce

2 T Yellow Mustard

1 T Dill Pickle Juice

1 T Spicy Mustard

1 T Burger Seasoning (I use Weber’s)

2 T Cornstarch


-Combine all sauce ingredients well in bowl to make slurry, set aside.

-In large skillet over medium heat add beef, onion and garlic.  Season with salt.  Cook until meat is almost done.  Pour in sauce and tomatoes.  Cover and simmer 10 minutes.  Remove from heat and allow to cool (if not cheese will melt in later step before tortilla browns, stir in bacon pieces and set aside.

-Over medium heat, light spray pan with pam.  Add in tortilla, lightly brown, flip over, add in enough swiss to coat bottom, top with cooled beef mixture, tomato and pickle.  Top with cheddar, fold to close and cook until golden brown and crispy and cheese melted.  Allow to cool a bit before cutting.  Enjoy!
