4 lb. Pork Loin Roast
1 C Cooked Broccoli, diced small
2/3 C Shredded Gouda
3T Olive Oil
1 1/2 tsp. Garlic Salt
1 tsp. Herbs De Provence
3/4 tsp. Lemon Pepper
-In small bowl combine olive oil, garlic salt, herbs de provence, and lemon pepper. Set aside.
-Cut open pork loin down middle until about 1 inch from bottom, slowly slice sides, pulling toward you as you cut. Your goal is to cut open so roast is flat.
-Inside roast place pesto sauce, top with broccoli and then cheese.
-Using baking twine, roll up and secure roast (don’t roll so tight that filling pushes out). Place in 13X9 inch baking dish.
-Top with olive oil mixture.
-Bake 450 degrees for 12 minutes, reduce heat to 350 degrees for 1 hour to 1 hour 30 minutes.
-Remove from oven and pan, cover in foil and allow to rest at least 10 minutes prior to cutting. Enjoy!
