This recipe is a great alternative to the classic mashed potatoes we all love. This might be my new favorite cauliflower recipe.
1 Head Cauliflower, florets removed
2 T Butter
1 T Minced Garlic
1 T Cream Cheese, softened
1/4 C Parmesan Cheese
Salt and Pepper to taste
-In medium pot over high heat, bring salted water to boil (you will need enough to cover cauliflower), add in florets. Boil 7 minutes.
-In small pot melt butter over medium low heat, add in garlic and cook until garlic becomes fragrant.
-Drain Cauliflower, using clean kitchen towel, lightly dry cauliflower (this will prevent too much moisture and will result in fluffy finished product.)
-Place drained cauliflower, butter mixture and remaining ingredients in food processor. Process until cauliflower is pureed and ingredients are well blended.
-I served mine with fresh parsley on top. Enjoy!
