Creamy Red Pepper Sauce

I needed to use a jar of roasted red peppers, but also needed to make dinner.  This was a winning recipe, maybe its because red peppers are sweeter than tomatoes in a sauce, maybe its because we were all starving, either way this is a great recipe for your next pasta meal.


16 oz. Jar Roasted Red Peppers

2 T Brine from jar

2 T Butter

2 Pearl Onions, diced

3 Cloves Garlic, minced

1/2 tsp. Italian Seasoning

Pinch Sugar (this helps cut the acidity)

1 1/4 C Heavy Cream

1/3 C Grated Parmesan

1/2 C Diced Fresh Spinach


-In food processer add peppers and brine.  Process until creamy.

-In medium skillet over medium heat melt butter, add in onions and a dust of salt and pepper, cook 3 minutes.  Add in garlic, cook about 1 minute or until fragrant.  Add in minced peppers, cook until sauce thickens.

-Add in Italian seasoning, sugar, cheese and heavy cream, stirring often cook 7 minutes.  Add in spinach and cook an additional 5 minutes.

-Use over your favorite pasta.  Enjoy!
