Mexican Cauliflower Rice


1 Head Cauliflower, florets removed

5 Green Onion, diced (light green and white parts)

2 Cloves Garlic, peeled

2 T Olive Oil

6oz. Can Tomato Paste

3T Diced Green Chilies (canned is best), drained

1 1/2 tsp. Cumin

1/2 tsp. Paprika

2 tsp. Garlic Salt


-Place cauliflower, green onions, garlic in food processor.  Process until cauliflower resembles rice and all other ingredients are well chopped.

-In large skillet over medium heat, heat oil, tomato paste and chilies for 2 minutes.  Add cumin, paprika and salt, stir to blend.  Add in cauliflower mixture.

-Stir to blend.  Cook 8-10 minutes or until cauliflower is fluffy and water has cooked out.  Stir this often or it may burn.  Enjoy!
