Creamy Chicken and Spinach Soup

I was in desperate need of a new soup recipe that contained chicken.  This was the winner, and the tiny humans loved it and never noticed the veggies (so mom win lol).

Ingredients:

2 Carrots, sliced thin or diced

2 Celery Stalks, diced small

1 Yellow Onion, finely diced

2 Large Garlic Cloves, minced

2 Roma Tomatoes, diced

1.5 lbs. Boneless, Skinless Chicken Breasts, diced small

4-6 Baby Bell Mushrooms, sliced thin

4 C Chicken Broth

3 C Vegetable Broth

1 T Fresh Oregano, diced

1/2 tsp. Dried Thyme

1/4 tsp. Ground Sage

Salt and Pepper to taste

1/2 C Heavy Cream

1 C Fresh Diced Spinach

1 lb. Package Potato Gnocchi

Sauce:

1/4 C Butter

1/3 C Flour

2 C Whole Milk

1/4 C Shredded Parmesan Cheese

Dash Nutmeg

Salt and Pepper to taste

Directions:

-Place all ingredients except, sauce, cream, spinach and gnocchi in crockpot, cook low 5-7 hours.

-Add in gnocchi and cook until done.

-Place butter in small pot over medium low heat, whisk in flour to make roux.  Slowly stir in milk, ensure roux is dissolved.  Stir in parmesan cheese, nutmeg, salt and pepper.  Bring to low boil until cheese melts and sauce thickens.

-Add in spinach, cream and sauce right before serving.  Enjoy!
