Southern Style Hushpuppies

Everyone I know has their own recipe for hushpuppies, but for me this one works.  Hushpuppies are essentially savory fried dough, they are simple and easy to make.  I don’t use self rising cornmeal or flour, but if you do, just use smaller amount of batter.

3/4 C Cornmeal

1/3 C Flour

1/4-1/2 C Red Onion, can use yellow (place in food processor to mince)

1/2 C Buttermilk

Dash Garlic Salt

Pinch Cayenne Pepper

Pinch Old Bay Seasoning (optional)

Oil for frying (I use peanut oil)

-Heat oil to 350 degrees.

-Combine all ingredients with spoon until dry ingredients are wet and well incorporated.  Allow to sit at least 5 minutes prior to using.

-Drop 1/2-1 T batter into hot oil, cook until golden brown.  Remove from oil and allow to drain (I use a cooling rack placed over paper towels on a baking sheet), can sprinkle with additional salt if you desire.  Enjoy!
