Flank Steak Hobo Dinner

This recipe takes me back to my girl scout days and family camping trips.  We always made these over the campfire while sitting around singing songs and such.  So I decided to bring back the past, and use the grill instead.  Though this recipe could easily be made over a campfire, though the cooking time may vary depending on the heat of the fire.

1 lb. Beef Flank Steak, sliced thin

1/4 C Red Wine Vinaigrette

1/4 C Dale’s Steak Seasoning

3 T Worcestershire Sauce

7-9 Red Potatoes, washed and diced

1 Onion, finely diced

3 Cloves Garlic, minced

1 Red Bell Pepper, diced

2 Carrots, diced

1 Celery Stalk, diced

2 C Cheddar Cheese, shredded, divided

3 T Worcestershire Sauce

3-5 T Franks Hot Sauce

Seasoning Salt, amount depends on taste

4 T Butter, cubed

-Place steak in sealable bag, pour in Dale’s, vinaigrette, and 3 T Worcestershire sauce; seal bag and refrigerate at least 1 hour.  Drain off marinade.

-In bowl combine all ingredients except 1 C Cheese.

-Create aluminum foil packet, pour in mixture, seal packet.  Can make multiple smaller packets if you desire.

-Grill over medium high heat, starting with seam side down on foil for 20-30 minutes, flipping and cooking an additional 20-25 minutes.  Remove from grill and sprinkle with remaining cheese.  Allow to cool 10 minutes prior to serving.  Enjoy!
