1 lb. Brussel Sprouts, cleaned and cut in half lengthways
3 T Olive Oil
1/2 Lemon Juiced
1 Clove Garlic, minced
1/4 tsp. Red Pepper Flakes
Salt and Pepper to taste
1 T Red Wine Vinegar
1/3 C Shaved Parmesan
-In bowl combine olive oil and lemon juice, toss Brussel sprouts. Add in garlic, red pepper flakes, salt and pepper, ensure evenly coated.
-Place coated sprouts on parchment lined baking sheet. Bake 400 degrees for 30-40 minutes or until softened. Shake pan at least once half way through cooking time.
-Remove from oven, toss in vinegar and parmesan. Serve hot. Enjoy!
