Creamy Spinach Orzo


1 lb. Orzo Pasta

2 T Butter

2 tsp. Minced Garlic

1 T Flour

1/2 C Heavy Cream

1 1/4 C Whole Milk

Dash Nutmeg

Salt and Red Pepper Flake to taste

1 C Diced Fresh Spinach

1/2 Lemon, juiced

2/3 C Parmesan,grated


-Cook pasta per package directions, drain, add in 2T butter if you desire, set aside.

-In small pot, melt 2 T Butter over medium heat, add in garlic and cook about 2 minutes.  Add in flour to create roux.  Whisk in heavy cream and milk, ensure all of roux dissolves.  Add in nutmeg, salt and red pepper flakes, cook 5-7 minutes or until sauce thickens slightly.  Add in spinach, cook until spinach wilts.

-Remove from heat add in lemon and cheese, stir until cheese melts.  Pour sauce over pasta.  Serve immediately.  Enjoy!
