Caprese Stuffed Pork Loin


4lb. Pork Loin

Garlic Salt for dusting

2/3 C Grated Mozzarella

1 Roma Tomato, diced

2 T Fresh Basil, diced

1 Clove Garlic, minced

3T Olive Oil

1 T Italian Seasoning

Dash Garlic Powder

1/2 C White Wine


-Preheat oven to 450 degrees.

-Cut pork loin down top and pull roast to the side as you cut around, can cut in half for easier cut.

-Dust inside of roast with garlic salt, top with 1/2 of cheese, sprinkle tomato, garlic and basil over cheese, top with remaining cheese.  Using baking twin, roll roast tight, tie tight with twine, ensure not too tight or filling may ooze out.

-Combine olive oil, Italian seasoning and garlic powder, rub on out side of roast, place roast in 13X9 in baking dish, pour 1/2 C White Wine in bottom of pan.  Bake for 15 minutes, reduce temperature to 350 degrees, bake an additional hour to 1 hour 30 minutes or until internal temperature reaches 160 degrees.

-Remove from oven and allow to rest 15 minutes prior to serving.  Enjoy!
