I seriously use this as a meal for my family, it contains all the major food groups, so I think I can say its okay as a meal or a snack.
1 lb. Ground Bison (can use low fat beef)
1/2 Yellow Onion, finely diced
1/3 C Bell Pepper (I used orange and yellow)
2 Cloves Garlic, minced
3 Roma Tomatoes, diced
32 oz. Block Velveeta, cut into cubes
1 C Shredded Cheddar Cheese
15 oz. Can Black Beans, drained and rinsed
1/2 C Salsa Verde (optional)
1/2 C Milk
1/3 C Sour Cream
1/4 C Diced Fresh Cilantro
Adobo Sauce to taste
-In large skillet, cook bison, onion, garlic and peppers until veggies are tender and meat is done. Add in tomatoes and cook 3-5 minutes or until they start to cook.
-Add meat and all other ingredients to crockpot, cook low about 2 hours, stirring on occasion. Serve with your favorite chips. Enjoy!
