Chicken Parmesan Soup


2 Boneless, Skinless Chicken Breasts, shredded

4 C Chicken Broth

4 C Vegetable Broth (can use more chicken)

28 oz. Can Diced Tomatoes

1 Onion, finely diced

2 tsp. Minced Cloves Garlic

6 oz. Tomato Paste

2 tsp. Sugar

2 tsp. Italian Seasoning

Salt and Pepper to taste

8oz. Fresh Mozzarella Pearls

1/2 C Grated Parmesan Cheese

8oz. Bag Cheese Tortellini

1 C Diced Fresh Spinach (optional)


-Follow instructions above to shred chicken. Set aside

-Pour all other ingredients into crockpot, cook low 6 hours, 30 minutes prior to serving add in cheeses, pasta and spinach.  Soup is done when cheese is melted and pasta done.  Enjoy!
