Italian Pasta Salad

Ingredients:

1 Box Garden Rotini Pasta

1 Medium Cucumber, cut in half, sliced thin

1 Large Shallot, finely diced

1/3 C Diced Marinated Artichoke Hearts (drain well before dicing)

1/3 C Roasted Red Peppers, drained well

2 T Capers, drained well

1/3 C Grated Parmesan Cheese

3/4 C Italian Dressing (any will work)

Directions:

-Cook pasta per package directions, drain and rinse in cold water.

-Add pasta and all ingredients to large bowl.  Season with salt and pepper to taste.  Place in airtight container and refrigerate at least 1 hour prior to serving, stir well and Enjoy!
