Miso Japanese White Soup

This is my spin on the classic soup, I love miso so I had to add some to this soup.  I must say this soup is surprising filling, and was a quick family favorite.

Ingredients:

3 C Vegetable Broth

3 C Chicken Broth (use more vegetable if needed)

2 Carrot, peeled and diced

1 Large Celery Stalk, diced

1 Yellow Onion, diced

1 tsp. Grated Fresh Ginger

2 T Soy Sauce

1 C Water

1 T Red Miso Paste

1 T White Miso Paste

3 Baby Bell Mushrooms, sliced thin

3 Scallions, sliced thin

Directions:

-In large pot add in all ingredients except water, miso, mushrooms and scallions.

-Bring to boil, cover and simmer 30 minutes, drain out vegetables.

-Combine water and both miso pastes, pour and stir into broth.

-Serve into bowls, add in mushrooms and scallions to each serving.  Enjoy!
