5 Slices Bacon, cooked crisp, crumbled
2 C Cabbage, finely diced
3 Green Onions, diced (white part only)
1 Clove Garlic, minced
1 1/2 tsp. Grated Fresh Ginger
1/2 T Sesame Oil
1/2 T Soy Sauce
1/2 tsp. Chinese 5 Spice
1 1/2 T Olive Oil
1 1/2 C Shredded Chicken
-In bowl combine all ingredients except bacon, olive oil and chicken. Stir well to ensure even flavor coating.
-In large skillet over medium high heat, heat olive oil. Add in cabbage mixture, cook 3-4 minutes or until cabbage starts to wilt. Add in chicken, cover, reduce temperature, simmer for 7 minutes. Remove from heat, and allow to cool a bit.
-Stir in bacon. Spoon 1-2 T Mixture into each eggroll wrapper. Roll and seal edge with water.
-Place on parchment lined baking pan. Bake 400 degrees for 8-10 minutes, flip over and cook an additional 5-7 minutes or until crisp and golden brown.
