I needed a new pie for PI Day, yes I know that it isn’t the official pie day, but in my nerdier state of mind, it seems like the perfect day to serve pie to me. This was the winner, since I had tons of marshmallows, so this was the perfect way to use some of them up.
12 Full Sheet Graham Crackers
1 Stick Butter, melted
1/3 C Sugar
10 T Butter
3/4 C Quality Cocoa Powder (I love MOHO brand from Belize)
1 1/4 C Sugar
1/4 tsp. Sea Salt
3/4 tsp. Quality Pure Vanilla Flavoring (I love the good Mexican Vanilla)
1/2 C All Purpose Flour
20-30 Marshmallows, cut in half
-Place graham crackers in food processor and pulse until finely ground. Pour into bowl and mix with sugar, mix in butter until all dry ingredients are wet. Place into 9 inch pie pan, and press tight into bottom and sides, set aside.
-In medium pot over medium low heat, melt butter. Stir in cocoa powder, sugar and salt. Mix until all ingredients are well wet and blended, mixture will be sand like.
-Pour mixture into large bowl, allow to cool a bit. If too hot it will cook eggs. Stir in vanilla, and eggs one at a time. Mix in flour, just long enough for flour to be incorporated. Pour mix into crust.
-Bake 325 for 28 minutes, add marshmallows on top. Bake an additional 5 minutes. Remove from oven (you can use a torch to give the char marks, but this isn’t necessary), completely cook pie before serving (if not mixture may crumble). Enjoy!
