I hate smoked meat so please note this recipe is without any smoke flavor. But I promise this will not affect the end result one bit, these were amazing, they take some time but are so worth it. This recipe is for a gas grill, but is also open to whatever flavor rub and sauce you wish to use.
1.8-2.8 lbs. Pork Ribs
-Rinse ribs, remove silver skin (can look up videos online, there is no perfect way to do this, I cut one side with knife and pull using my hands the skin off). Rinse again.
-Heavily dust both sides of ribs with rub, and allow to sit for 20 minutes (never want to cook cold meat, so this allows it to come to room temperature as well).
-Cut on grill burner that is farthest from gas tank. Heat grill to about 315-320 degrees. Place ribs meat side down on burner farthest from one that is on. This will allow them to cook without burning. Cook 1-1.5 hours. Flip over and cook another 1 1/2 hours.
-Cut on burner to medium under the ribs, brush on BBQ sauce, cook about 5 minutes, flip and cook another 3-5 minutes. Remove from grill, wrap in foil and rest 20-30 minutes prior to cutting (cut in-between bones), brush with remaining sauce upon serving. Enjoy!
