Classic Meatloaf

This is my version of the classic recipe so many of us grew up on.  I personally can not stand meatloaf, but my family loves it.  This one contains no ketchup, and has some spins on the flavor that you may have never thought of.  I know the ingredients list looks long, but trust me it is worth the extra effort.


2 lbs. Lean Ground Beef

1/2 Yellow Onion

2 Mini Bell Peppers

1 Egg

2 C Bread Crumbs (may need more for GF version)

2/3 C Finely Shredded Cheddar Cheese

Liquid Mix:

8 oz. Can Tomato Sauce

2 T Worcestershire Sauce

1 T Spicy Mustard

1/2 tsp. Granulated Garlic

1/8 tsp. Ground Allspice

Seasoning Salt and Pepper to taste


1/2 C Chili Sauce

1/4 C Brown Sugar

1/8 C Apricot Preserves

2 T Yellow Mustard

1 T Worcestershire Sauce


-Place onion and bell pepper in food processor, mince fine.  Set aside.

-In small bowl combine liquid ingredients, set aside.

-In large bowl combine meat, egg, onion and bell pepper mixture,  and liquid ingredients.  Add in bread crumb and cheese.

-Place in 11X7 baking pan, if you want a true loaf shape you may need a larger pan.

-Bake 350 for 1 hour 30 minutes.

-Combine glaze ingredients, stir well to ensure well mixed.  Pour over top of meat loaf, use spoon to spread out.  Bake and additional 5-7 minutes.  Remove from oven, cover in foil and allow to rest 10 minutes prior to serving.  Enjoy!
