3 C Shredded Chicken
2 Carrots, diced small
2 Celery Stalks, diced small
3 Leeks, diced (white and light green parts)
1 Clove Garlic, minced
16 oz. Small Fingerling Potatoes (I used ones the size of pebbles)*
1 tsp. Dried Thyme
1 tsp. Ground Sage
Salt and Pepper to taste
4 C Chicken Stock
2 C Heavy Cream
1 1/2 C Shredded Swiss Cheese
-Place all ingredients except cream and cheese in crockpot. Cook low 6 hours.
-Add in cream and cheese, stir to combine, allow to cook an additional 30 minutes. Enjoy!
*Can use any potato you desire, I just suggest dicing small.
