I needed a quick meal for the tiny humans, this literally took 30 minutes from start to serving.
3 Italian Sausages (I used the larger ones)
2 T Butter
1 Medium Shallot, finely diced
1 tsp. Minced Garlic
28 oz. Can Crushed Marzano Tomatoes
2 T Water
1/2 T Italian Seasoning
1 tsp. Sugar
4 C Chicken Broth
2 C Long Grain Rice (I use Basmati)
-Fully cook sausage, slice thin (can use already cooked).
-Bring Chicken broth to boil, stir in rice with salt and pepper, cook per package directions.
-In pot, over medium heat melt butter, add in shallot and garlic, sprinkle with salt and pepper. Cook about 3 minutes. Stir in tomatoes and water. Bring to simmer, cover and cook 20 minutes. Remove from heat and stir in sliced sausage.
-Serve sauce over rice, can top with fresh diced parsley. Enjoy!
