Everyone loves a sloppy joe, but with having so many tiny humans in the house, its so much easier to serve many things smaller. This was delicious and with a slight spin on flavor, it may make you switch up your normal sloppy joe recipe.
1.5 lb. Ground Beef (don’t use too lean, the fat is needed for flavor)
1/2 Yellow Onion, minced
2 Mini Bell Peppers, diced
1 Clove Garlic, minced
12 Slider Rolls
1 1/2 C Shredded Colby-Jack Cheese
1/4 C Unsalted Butter
1 T Brown Sugar
1 T Spicy Mustard
1/2 T Worcestershire Sauce
1/8 tsp. Onion Powder
1/8 tsp. Garlic Powder
-In large skillet over medium heat, add in meat, garlic, peppers and onion. Cook until most of grease has cooked out and meet is slightly pink. Drain off excess grease if need be, but reserve at least 1-2 T of rendered fat. Pour in sauce, bring to simmer, lower temperature, cover and cook for an additional 10 minutes. Remove from stove, uncover and allow to cool a bit.
-Grease bottom of 13X9 inch baking dish. Place bottom of rolls in pan, top with meat, then cheese, then top of buns.
-In small pot over medium low heat, add in glaze ingredients. Cook until butter melts and sugar and spices dissolve. Brush sauce over rolls.
-Cover pan with foil, bake 350 degrees for 10 minutes, remove foil and bake 8-10 minutes or until tops are golden brown and cheese is melted. Enjoy!
