Cajun Shrimp and Grits

Ingredients:

1 lb. Shrimp, peeled and deveined

2 T Butter, melted and cooled slightly

2 T Lemon Juice

1 T Cajun Seasoning

1 T Olive Oil

1 Large Shallot, minced

1 Clove Garlic, minced

Salt and Pepper

1/4 C Water

Salt and Hot Sauce to taste

Grits:

2 C Milk

2 C Chicken Broth

2 T Butter

2 C Grits (not quick cook)

Salt and Pepper

Directions:

-In large pot over medium high heat, bring milk, broth and butter to boil.  Add in grits, salt and pepper, reduce heat, stirring often to prevent sticking.  Cook until grits thicken but are still creamy.

-In small bowl, add shrimp, pour in melted butter and lemon juice, coating shrimp.  Stir in Cajun seasoning, ensure all shrimp are coated evenly.

-In large skillet over medium high heat, heat olive oil.  Add in shallot,  season with salt and pepper,  cook 30 second, add in garlic cook 1 minute.  Add in shrimp, cook each side 1-2 minutes, flip and cook an additional 1-2 minutes.  Remove shrimp, pour in water and hot sauce.  Reduce temperature to medium, allow to simmer about 5 minutes, scrapping any bits off bottom.  Remove from heat and stir in shrimp.

-Plate grits, top with shrimp and some of liquid.  Enjoy!
