Nacho Potatoes



2 lb. Fingerling Potatoes

1 T Olive Oil

1 tsp. Chili Powder

1 tsp. Cumin

1 tsp. Dried Cilantro

1/2 tsp. Paprika

1/2 tsp. Salt

Pepper to taste

2 Green Onions, sliced thin

Nacho Cheese Sauce of choice (I use velvetta and rotel)

1 Roma Tomato Diced

Fresh Cilantro for garnish


-Cut potatoes length wise in half.  Place in bowl, pour in olive oil, coat potatoes.  Add all other ingredients except cheese, tomato and fresh cilantro.

-Stir well to coat.  Place on parchment lined baking sheet (I do this for easier clean up), bake 400 degrees for 40 minutes.

-Sprinkle tomatoes over cooked potatoes, drizzle cheese sauce, top with cilantro.  Enjoy!
