I love fish tacos, I play around with flavors often. This recipe is my favorite and its easy and tasty. I have fed this to people whom claim they hate fish, and have never had any complaints (even from picky tiny humans).
2 lb. Fresh Cod Fillets
3.5 oz. Kraft Zesty Lime Vinaigrette
2 T Orange Juice
1 T Sesame Oil
2 tsp. Fresh Chopped Cilantro
2 1/2 T Taco Seasoning
1 T Olive Oil
2tsp. Lime Juice
1 T Chopped Cilantro
-Cut cod into bite size cubes. Combine vinaigrette, orange juice, cilantro and sesame oil. Place fish cubes into airtight bag or container, poour marinade over fish. Allow to marinate at least 4 hours.
-Drain off marinade, place fish in bowl, pour in taco seasoning. Ensure all pieces are evenly coated, allow to sit for at least 1 hour.
-In skillet over medium high heat, heat olive oil and lime juice. Place fish in skillet, cook 7-10 minutes, stirring gently until fish is cooked. Do not over cook or fish will become dry. Place in 1 T Cilantro and mix gently.
