I love roti bread, my family uses it as most use tortillas. I love this recipe the most for fish tacos, but have also used it for chicken.
2 C Bread Flour
1/4 C Chopped Cilantro
2 T Butter, melted
1 tsp. Salt
2 tsp. Granulated Garlic
2/3 C + 2 T Water
-In bowl or stand mixer, combine flour, garlic, salt and cilantro. Pour in butter and water, using a fork combine until mixture comes together.
-Kneed on floured surface until mixture become elastic (meaning when pressed it quickly comes back). Place dough in saran wrap and cover tightly for about one hour.
-Break off large gold ball size pieces. For into ball, place on floured surface, roll very thin.
-Heat skillet on medium high heat, cook each for about 3 minutes or until toasted, flip and cook other side. Enjoy!
