12 oz. Ground Italian Sausage
1/2 Yellow Onion, diced
2 Cloves Garlic, minced
28 oz. Can Marzano Crushed Tomatoes
3 C Vegetable Broth
3 C Chicken Broth
1/2 T Italian Seasoning
Salt, Pepper, Sugar to taste
12 oz. Container of Cheese Tortellini
6 oz. Package of Pepperoni
Shredded Mozzarella Cheese for serving
-In large pot over medium heat, cook sausage, onion and garlic. Cook until sausage is fully cooked and veggies soften. Add in tomatoes, both broths, Italian seasoning, salt, pepper and sugar (this is to help with acidity).
-Bring to boil, simmer for 15 minutes. Add in tortellini and cook until pasta is al dente. Add in pepperoni right before serving. Serve with shredded mozzarella on top of each bowl. Enjoy!
