Hashbrown Breakfast Casserole



10 Eggs

1 2.75 oz. Package Peppered White Gravy Mix

5 Pearl Onions, diced

1/4 C Sweet Bell Pepper, diced

1.5 lb. Cooked Ham, diced

1 1/2 C + 1/2 C Cheddar Cheese, shredded

1 lb. Bag Frozen Hashbrowns

Any seasoning you would normally use in scrambled eggs (I use chili powder, garlic salt and old bay)


-Make gravy per package directions, but reduce liquid amounts (I buy Pioneer Brand and reduced water down by 1/2 C, I also use milk for the rest of liquid), set aside.

-In large bowl, whisk eggs, add in gravy, whisk well.  Stir in remaining ingredients, pour into greased 13X9 inch baking pan.  Bake 350 degrees for 45 minutes, remove from oven and allow to rest for about 10 minutes prior to serving.  Enjoy!
