Italian Inspired Beef Roast over Polenta



1-2 lb. Top Round Roast

1 Can Diced Tomatoes

1 Can Tomato Paste

2 Cloves Garlic, minced

1 medium Shallot, minced

1 1/2 tsp. Italian Seasoning

1/2 tsp. Oregano

Salt and Pepper

1 C Water

2 T Cornstarch


-Place all ingredients except water and cornstarch in crockpot, cook low 4-6 hours or until meat falls apart.

-Remove meat from crockpot, place all other broth in pot on stove over medium low heat.  Mix water and cornstarch together, whisk in cornstarch mixture into broth. Bring to low boil, and simmer for about 5 minutes, remove from heat.

-Cook polenta per package directions, I use chicken broth instead of water in mine.

-Slice polenta, top with meat and gravy. Enjoy!
