Chicken Parmesan Baked Penne

Take the chicken parmesan that so many love, and the idea of baked Ziti and this recipe is just what you need.



2 Boneless, Skinless Chicken Breasts

1 Jar Red Sauce

1 C Diced Spinach

1 1/2 C Shredded Mozzarella

3/4 C Shredded Parmesan

1 Box Penne Pasta


-Place chicken in pot, cover in water, add salt, boil about 17 minutes.  Remove chicken from pot, allow to cool.  Shred into chunks, set aside.

-In another pot add red sauce, add in spinach and bring to simmer until spinach wilts.  You may want to add salt and pepper to sauce, you want your sauce to have a great taste, may also need to add 1/2 tsp. Sugar to mellow out the acidity.

-Cook pasta per package directions al dente. Drain.

-Add cooked chicken and pasta to red sauce. Mix well.

-Add half of pasta mixture to 11X7 baking dish, top with half of parmesan and mozzarella cheese.  To this again with remaining ingredients.

-Bake in oven at 375 for 20 minutes or until cheese is melted and starts to brown.  Allow to rest about 5 minutes prior to serving.  Enjoy!
