One Pan Cajun Turkey Alfredo

I had leftover white meat turkey and tons of broth from Thanksgiving.  This was how I completely cleaned out my fridge of the leftovers.

Ingredients:

3T Butter

1 Medium Shallot, diced small

2 Cloves Garlic, minced

4 C Cooked Turkey Breasts, diced (can use chicken)

1 1/2 C Heavy Cream

3C Turkey Broth (can use Chicken)

16 oz. Cheese Tortellini

1/3 C Shredded Parmesan Cheese

2 T Cajun Seasoning

Salt and Pepper to taste

Directions:

-Over medium high heat, melt butter, add in shallot and garlic.  Cook until soft, add in turkey, broth and heavy cream, bring to low boil, add in pasta.  Bring back to simmer.  Cover and cook for about 15 minutes or until pasta is done.

-Add in cheese and seasoning.  Allow to sit about 5 minutes before serving. Enjoy!
