Vegetarian Pasta Fagioli with Cranberry Beans



2C Cranberry Beans (can use other)

1 Medium Onion, diced

2 Carrots, diced

2 Celery Stalks, diced

3 Cloves Garlic, minced

2 14.5 oz. Cans Stewed Tomatoes

2 tsp. Dried Basil

2 tsp. Dried Oregano

1 1/2 tsp. Paprika

1 tsp. Dried Thyme

6 C Vegetable Broth

Salt and Pepper to taste

1/2 C Diced Spinach

1 1/2 -2 C Small Pasta (I used small seashells, use GF if needed)


-I soak, drain and rinse my beans overnight before cooking.

-Combine all ingredients, except pasta and spinach in crockpot.  Cook low 6 hours or until beans and veggies are done, 30 minutes prior to serving add in pasta and spinach.  Stir well, Enjoy!
