Asian Inspired Quinoa

I love quinoa and so does my family, but I was making dinner for a family that had never had it.  I decided to make it amazing, so they too could learn to love quinoa.



2 C Quinoa (I used half red, half tri-colored)

4 C Chicken Broth (can use vegetable)

1 C Green Peas (I used frozen that were thawed)

1 oz. Soy Sauce (ensure GF)

1 T Peanut Butter (ensure GF if needed)

1 T Brown Sugar

1/2 T Sesame Oil

1/2 T Rice Wine Vinegar

1/2 tsp. Chinese Five Spice (can substitute cinnamon and reduce amount)

1/4 tsp. Garlic Powder

1/4 tsp. Ground Ginger

Sriracha to taste


-In pot, combine quinoa and broth.  Bring to boil, reduce temperature and simmer 15-18 minutes, or until broth is absorbed and quinoa is cooked.

-Combine remaining ingredients, except peas.  Once quinoa is done add in peas and sauce, and allow to simmer 7 minutes.  Remove from heat, and allow to sit covered 5 minutes before serving. Enjoy!
