Vegetarian Chickpea Noodle Soup



2 Cans Chickpeas, drained

2 Carrots, diced

2 Celery Stalks, diced

1/2 Red Onion, diced

1/2 tsp. Dried Thyme

1/2 tsp. Ground Sage

1/2 tsp. Cumin

Salt and Pepper to taste

6 C Vegetable Broth

3/4 C Baby Bell Mushrooms, diced

5 Green Onion, sliced thin (green and white parts)

1/2 Bag of Egg Noodles (use gluten free or any other pasta you wish)


-Place all ingredients, except noodles, mushrooms and green onions in crockpot.

-Cook low 6 hours or until veggies are tender.  About 30 minutes prior to serving add in remaining ingredients(please note that gf pasta will become mushy quicker than regular pasta)  Enjoy!
