Bacon Ranch Beef and Broccoli

I know this may sound a bit weird, since bacon ranch is usually used with chicken, but its amazing with the beef.

Ingredients:

1 lb. Thin Beef Chuck, sliced thin

2 T Olive Oil

1 Package Ranch Dressing (I used Hidden Valley Fiesta Ranch)

1 Head of Broccoli

6 Slices Bacon, cooked crisp, crumbled (reserve 2 T Bacon Grease)

1 T Olive Oil

2 T Bacon Grease mentioned above

1 Medium Shallot, finely diced

1 Clove Garlic, minced

3/4 C Sour Cream

1/3 C Ranch Dressing

3 T Milk

1/2 C Finely Shredded Cheddar Cheese

1 T Fresh Chives, finely chopped

Salt and Pepper to taste

Noodles of Choice

Directions:

-In bowl coat beef in 2 T olive oil, then coat in package of ranch.

-Steam broccoli over salted water for 7 minutes, set aside.

-Mix sour cream, ranch dressing, cheese, milk, and chives in bowl. Set aside.

-In large skillet over medium high heat, heat 1 T oil and 2 T Bacon Grease, add in beef, shallot and garlic.  When meat is almost done about 5-7 minutes, add in broccoli, bacon and ranch and sour cream mixture.  Cover and simmer 8 minutes.  Serve over your favorite pasta.  Enjoy!
