Creamy Chicken Gnocchi Soup



2 T Butter

Salt and Pepper for dusting

2 Boneless/Skinless Chicken Breasts

4 C Chicken Broth

2 C Vegetable Broth

1/2 Onion, chopped

2 Carrots, diced

2 Cloves Garlic, minced

1 1/2 tsp. Dried Thyme

1 tsp. Dried Parsley

1/2 tsp. Ground Sage

Salt and Pepper to taste

1 Package of Potato Gnocchi

2 C Heavy Cream

1 C Spinach, chopped

1/3 C Shredded Parmesan Cheese


-In skillet, over medium heat, melt butter, cut chicken into cubes, dust with salt and pepper, cook in skillet until cooked.

-Add chicken and all other ingredients except cream, Parmesan and spinach to crockpot.  Cook high 4 hours.

-Reduce temperature, add in cream, gnocchi, Parmesan and spinach.  Cook an additional 30 minutes.  Enjoy!
